Roasted fruit with olive oil

Prep time x 5 mins, cook time x 20-30 mins

Ingredients:

·       500g of fruit of choice (I use chopped apple, rhubarb and black berries)

·       3 x tbsp olive oil

·       ½ lemon


Method:

1.      Preheat oven to 180 degrees.

2.      Chuck everything into an ovenproof baking dish and squeeze over the lemon.

3.      Cook for 20-30 until the fruit is soft.

4.      Enjoy warm over Greek yoghurt.
