Tahini, chickpea and cranberry salad

Serves x 4-6, prep time 15- 20 minutes

Ingredients:

·       1 x feta, chopped

·       1 x cucumber, diced

·       1 x red onion, diced

·       1 x cup mint, chopped

·       1 x cup parsley, chopped

·       1 x cup whole almonds, chopped

·       1 x can chickpeas, drained

·       1 x cup bulgur wheat or couscous, cooked

·       ½ cup cranberries

·       ½ olive oil

·       1 x tbsp tahini

·       1 x lemon, juiced

·       1 x tbsp honey

·       Seasoning


Method:

1.      Add the tahini, lemon, olive oil, seasoning, lemon juice and honey into a small bowl and stir well.

2.      In a separate large bowl, add the remaining ingredients and combine.

3.      Gently stir in the tahini mixture into the salad bowl until thoroughly combined.


Eat straight away and enjoy!
