Beetroot and sweet potato soup

Serves x 4
Prep and cook time: 45 mins

Ingredients:
3 x beetroots, peeled and chopped
2 x large sweet potatoes, peeled and chopped
1 x white onion, peeled and chopped
1 x tbsp olive oil
600-700ml of vegetable stock
1 x tbsp cumin
1 x tbsp of cumin seeds
Seasoning
Walnuts, cumin seeds and feta cheese to serve
Method:
Heat the olive oil in a large saucepan, once hot, add the onion and sauté until soft.
Add the cumin and seasoning and cook for a further 1 min.
Add the beetroot, sweet potato and vegetable stock and simmer on a medium heat for half an hour until soft.
Once cooked, blend with a handheld blender.
Serve with walnuts, cumin seeds and feta cheese.
