Moroccan style Roast chicken

Prep and cook time 1.45 mins


Ingredients:


- 1 x whole chicken

- 1 1/2 x tsp paprika

- 1 1/2 x tsp turmeric

- 1 x tsp cumin

- 1 x tsp parsley

- 1 x tsp cayenne pepper

- Seasoning

- 3 x tbsp Olive oil

- 1 x orange, cut into quarters

- 1 x onion, cut into quarters

- 5 garlic cloves, crushed


Method:

1. Preheat the oven to 180 degrees

2. Mix up all the spices into a bowl, place the chicken into a roasting tray and dry rub the spice mix onto the chicken

3. Drizzle 3-4 tbsp of olive oil and the orange juice all over and rub lightly again

4. With the left-over orange chuck this in the cavity and add the onions and garlic into the tray

5. Cook this for 1.5 hours, basting with the juices every 30 minutes

6. Serve with rice, fresh orange slices and roasted vegetables
