Almond protein bites

Serves x 8-10, prep time 15 minutes

Ingredients:
· 15 x medjool dates, destoned and roughly chopped
· 1 x cup desiccated coconut
· ½ cup oat flour
· ½ cup of cocoa powder, plus extra for dusting
· 3 x tbsp almond butter
· 8-10 almonds
· Pinch of sea salt
Method:
1. Soak the dates in 3 tbsp of water for 2 minutes.
2. Throw the dates with the water and the desiccated coconut into a blender and processes until combined. (Add more water if required).
3. Add all the remaining ingredients into a large bowl and mix. Then stir in the date mixture.
4. Using your hands, make 8-10 rounded balls. (The mixture should be sticky enough to roll into shape but not soggy. If soggy add more oat flour).
5. Place the balls on a plate and put in the fridge for a minimum of 1 hour.
6. After 1 hour, take the protein bites out of the fridge and sprinkle a plate with cocoa powder. Gently roll the balls into the cocoa powder and cover thoroughly.
7. Lastly, squidge one almond per protein bite in the centre.
