Simple tomato bread

Serves x 4, Prep time x 20 minutes


Ingredients:

·       4 x beef tomatoes (the better the quality the tastier)

·       4 x slices sourdough

·       2 x garlic gloves, crushed

·       3-4 tbsp olive oil

·       Seasoning


Method:

·       Toast the sourdough in a frying pan with the olive oil drizzled onto each slice.

·       Meanwhile, with a coarse grater, grate the tomatoes into a bowl.

·       Separate the grated tomatoes from the liquid and drain the liquid into another bowl (set this aside with the skins for another time). Season with salt.

·       Once the sourdough is toasted, rub the garlic over both sides of the toast.

·       Scoop a generous helping of the grated tomato over the sourdough, drizzle with some more olive oil and enjoy!
