Smashed potatoes

Serves x 4, prep time x 15 minutes, cook time x 40 minutes

Ingredients:
· 1 x bag of new potatoes
· 5-10 sprigs of thyme
· 3 x tbsp olive oil
· Seasoning
Method:
1. Preheat the oven to 180 degrees.
2. In a large saucepan, boil some salted water and throw in the new potatoes. Boil for 10 minutes.
3. Once par boiled, place the potatoes onto a baking tray. With the back of a spoon, gently squish down the potatoes slightly (enough to crack but not mash).
4. Drizzle over the olive oil and then sprinkle over the seasoning and thyme.
5. Roast for 40 minutes until crispy, turning half-way.
